Crispy Baked Parmesan Zucchini

These crispy oven roasted zucchini sticks are amazing, nutritious, healthy, and your kids will love them!
You can also do it will pickles and a side or ranch, if you want to spice it up a bit…
 

Baked Parmesan Zucchini

Vegetarian • Gluten free • 30 mins to make • Serves 4

Produce

1/2 tsp Basil, dried
1/4 tsp Garlic powder
1/2 tsp Oregano, dried
2 tbsp Parsley, fresh leaves
1/2 tsp Thyme, dried
4 Zucchini

Baking & Spices

1 Kosher salt and freshly ground black pepper

Oils & Vinegars

2 tbsp Olive oil

Dairy

1/2 cup Parmesan, grated

Simply cut your zucchini into quarters lengthwise, sprinkle on Parmesan cheese and throw into the oven and watch it get crispy and golden brown!

 

INSTRUCTIONS

  • Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
  • In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.
  • Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.
  • Serve immediately, garnished with parsley, if desired.

 

Nutrition:

This is a very healthy side dish because,  Zucchinis are a great source of potassium, which is important in maintaining a healthy blood pressure & good for your heart! The soluble fiber helps to lower blood cholesterol, and the cheese helps your body absorb the fat soluble vitamins found in the zucchini.
