Try these easy Lettuce Wraps that are simple & healthy!

 I love lettuce wraps because they are light and healthy, let’s start wrapping baby!

These are a few of my very favorite lettuce wraps that are so easy for you to make at home for lunch or dinner!

Here are two of my favs! You can always make with tofu or whatever meat you have, get creative peeps!

SOUTHWEST CHICKEN LETTUCE WRAPS | CHIPOTLE RANCH

Southwest Chicken Lettuce Wraps

Wrap 
1 head of lettuce or baby romaine
1  cup grilled chicken, chop it baby!
3/4 cup cherry tomatoes, halved
1/2 cup corn
1/2 cup black beans
1/4 cup red onions, chopped
Toppings
1 bunch cilantro, roughly chopped
1 cup shredded cheddar cheese
3/4 cup Fritos or tortilla strips
1/3 cup orange bell peppers, diced
limes, quartered

Dressing

Throw it all in a bowl and mix it up. Then, lay out your lettuce leaf and start layering your ingredients-chicken mixture, cilantro, cheese, fritos dressing and a squeeze of the lime.

GRILLED CHICKEN CAESAR LETTUCE WRAPS WITH HOMEMADE PARMESAN CROUTONS

To assemble the wraps, you need to wash up 2 heads of lettuce, Romaine or Butter lettuce whatever you like best!
2 heads baby romaine, washed, leaves
1 lb chicken, grilled, sliced into strips
1 1/2 cups grape or cherry tomatoes, halved
your favorite Caesar dressing
Shredded Parmesan cheese
2 cups homemade Parmesan stovetop croutons {recipe below or by them and call it a day}
To make them, just placea lettuce leaf on your plate and stack the chicken, tomatoes, croutons. Drizzle with Caesar dressing and sprinkle with a little Parmesan cheese.

CROUTONS:

You can make your own croutons or just buy them ( I don’t use them)
2 cups cubed crusty bread
{if you would like a crispier crouton, leave the bread cubes
out on the counter for a couple of hours before cooking}
1/4 cup good olive oil
1/4 cup shredded Parmesan cheese
Dump bread cubes into a pan.
Drizzle evenly with olive oil and toss until coated.
Cook on medium high heat, stirring and tossing occasionally until crusty and golden brown.
Remove from heat and sprinkle with Parmesan. Set aside for a few minutes while the Parmesan cheese melts onto the croutons.

Serve Buffet Style so everyone can do their thang!
