My kids love going strawberry picking. Once you buy or pick your fruits the best part is eating them, of course…and making your own fresh fruit popsicles is just the icing on the cake!
Visiting a local farm is a great opportunity to teach kids about the wonders of nature, how amazing and fascinating it can be to see a whole food grow before your eyes. You will be presented with an abundance of fun teachable moments. You can explain the role the bees play in growing food, what plants need to grow, how the sun plays a part in growing food and so much more. If you have the opportunity to talk to the local farmers I highly recommend it. Kids are sure to be left with the impression of how much hard work it takes to grow the food we eat.
Whether you pick your own fruit or purchase it, making a sweet treat such as fresh fruit popsicles can be a great family activity. Make sure to get the kids in the kitchen to help make their popsicles. They can pick the fruits they want to use and help to wash and prepare the fruits.
Making your own popsicles allows you to control the type and amount of sugar you use. When kids eat a lot of high sugar foods their taste buds become accustomed to high sugar content, and even the sweetest fruit may not register as sweet. It is a good idea to slowly wean kids off of high sugar foods. I recommend reducing sugar slowly. Here is a super quick, delicious popsicle recipe that is sure to please the whole family.
Strawberry & Peach Popsicles
2 cups fresh ripe strawberries, hulled and halved
1 cup fresh ripe peaches, cut in chunks
½ cup water
2-3 Tbsp. maple syrup, honey or coconut nectar syrup
1 Tbsp. freshly squeezed lemon juice
1 Tbsp. chopped fresh mint (optional)
Wash, hull and slice the strawberries.
Wash, remove pit, and slice peaches.
In a food processor, or blender combine the strawberries, peaches, sweetener, water, lemon juice and mint. Blend until smooth.
Pour the mixture into popsicle molds and place in the freezer.
Freeze for 4 hours & Enjoy!
